Easy Peasy Lemon Fridge Tart

I think I can now call this my signature dessert. I have made it a few times over the years, it never fails me and is always a winner!


So easy to make, easy to find the ingredients and a lot of freedom with the finishing touches. I like the combination of the fresh berries with the lemony tang of the tart, so as you can see I chose berries to fish off, however you can use your own favourite fresh fruits or lemon slices with some mint to give it that special finishing touch.


What you will need:

A round medium sized cake tin/ tart tin - 24 cm is a good size

Baking parchment to line your cake tin


Ingredients:

3 x fresh lemons

250 ml fresh cream

397g (or 1 small can) condensed milk

300g biscuits

1/2 cup melted butter


Method:

1. Crush biscuits with a rolling pin or in a blender

2. Add melted butter to the biscuit crumbs and mix together

3. Press biscuit mixture into your lined cake tin to create the base of the tart

4. In a mixing bowl, whip your fresh cream

5. Add in the condensed milk and mix together

6. Add the zest of the 3 lemons into the mixture

7. Squeeze the lemon juice of the 3 lemons into the mixture and mix well

8. Add the lemon mixture to the cake tin

9. leave in fridge to set fro at least 2 hours

10. Decorate as you wish and serve :)


Extra tip - I use speculaas biscuits as the spicy taste combines well with all the other flavours.


Serving Suggestion - sprinkle with powdered sugar for extra yum effect. Also tasty with a small dollop of vanilla ice-cream to compliment each slice of this heavenly tart.
